Pumpkin Cupcakes

Don't you just love fall?

For me it’s not just the changing of the leaves and cool weather

It’s all about anything and everything to do with pumpkin!
So here is an easy recipe that uses a boxed cake mix.

Pumpkin Spice Cupcakes with Butter Cream Pumpkin Frosting

For the cupcakes:

1 box spice cake mix
4 eggs
1 Cup Buttermilk
1/3 Cup Oil
2 tsp. pumpkin pie spice

Preheat oven to 350 degrees. Mix all ingredients together, beating for 2 minutes on med/high speed. Pour about ¼ cup batter into each cupcake liner and bake for 15-20 minutes. Cool completely on wire racks. Yields about 24 cupcakes.

 For the frosting:

1 Cup butter {NO Margarine} at room temp.
4 Cup powdered sugar
4 Tbsp. buttermilk {depending on consistency}
2 Tbsp. Pumpkin Pie Spice {Yes you read that right 2 Tbsp.}

Whip butter until fluffy adding 1 cup of powdered sugar at a time followed with 1 Tbsp. of buttermilk after each cup of powdered sugar. Repeating these steps until frosting is well mixed and holds peaks. Add vanilla and pumpkin pie spice, and mix thoroughly.

Frost your cupcakes and enjoy!
