Crockpot BBQ Pork- Keeper!

With Father’s Day fast upon us I thought I would share with you and easy pork BBQ sure to make any dad’s heart sing.



My entire family enjoys this easy Crockpot meal. And I love it for the mass amount of meat I can cook then freeze all at one time. Its perfect to satisfy man's carnivore needs!



BBQ Pork

5-7 pound Pork Shoulder butt roast {with or without bone}
1/4 cup of paprika
2 Tbsp. Salt
2 Tbsp. Pepper
1 tsp garlic powder
1 tsp dry mustard
1/3 cup liquid smoke




Place your meat in the crock pot and season. Turn on low and cook 12 hours, or on high for 6 hours. DO NOT REMOVE THE LID until cooking is done.  It will be soooo tender it falls off your tongs when you take it out, just like good BBQ is supposed to. Shred with fork and add BBQ sauce. We enjoy Head Country original BBQ sauce.


Great on a bun, baked potato or simply on its own.

Tween Room Redo

It only took Hannah about 7.5 years to stop loving the color pink. With that track record, after this tween update, I should be good to go until she leaves for college!


Pepto Pink has been replaced with Martha Stewart’s Sharky Gray. A color I l LOVE and one that little man thought was so funny. “Hannah your room is going to be the color of a shark” he would say. At least there is no longer a pink glow shining behind closed doors.


Hannah has taken on her mommy’s love for travel and the city of New York. So we used that as our main inspiration. She had three things she wanted to incorporate into her room. Zebra, the color turquoise and travel. So this is what we came up with.


Remember the N.Y.C. I made using Wal-mart frames and my printer?


And the large New York, New York canvas that I painted?


Her bed went from pretty in pink





To a peppy chic black, white and turquoise dream. We ditched the dust ruffle and added this old trundle my dad had. And a new mattress that my sister gave me. Using her old pillows I sewed and recovered them with the Statue of Liberty.


Spray painted it with our trusty Bahama Breeze blue and tossed on the twin mattress. Perfect for all those sleepovers!



Gone was the hot pink over sized mirror.




Repurposed into a frame for square bulletin boards.


I have been longing to create a collage wall and her room fit the bill.


I used some old Goodwill frames and painted them in an off white.


Framed a few play bills from some shows she has seen.




Created a canvas with the state of New York on it. And updated some super cute owls we found at GW for $1.99.


The zebra bulletin board was a gift to her from a dear friend. We used it to highlight some things she has collected along her travels.


Repainted the “H” and mixed in some super cute square travel plates I found at Crate and Barrel.


Her desk was updated by simply painting the chair, adding a cute bird cage {GW} and a few items she picked up for her birthday.


Framed pictures that I took on our last trip to New York.





And see those curtains? I found the velvet blue panels at Goodwill, $2.99 for the set! I picked up 7 yards of fabric at a discount store for $3.99 a yard and sewed these cute ruffled topped panels for the windows. It was so much easier to use the blue panels as a base.


This total room redo was under $386.00 with the paint costing the most at $122.00 for 2 gallons of paint and 12 cans of spray paint.


And I have one tween smiling from ear to ear.

Just a Tease...

After 156 days, 14 hours and 32 minutes  I have finally completed Hannah’s room redo! {Moving from "little girl" into "tween"}. Not that it required much time to complete, but our crazy lives kept getting in the way.


Here is a little teaser of her room that I can’t wait to share with you on Monday! I worked with her existing room decor and tossed in some really great Goodwill finds


And do I have a treat for you later next week. A dear friend of mine, whose home I adore, allowed me in to take some pictures and share with you!

White Chicken Enchiladas with Green Chile Sour Cream Sauce

Yah, yah, I know what you’re thinking…just another creamy chicken enchilada recipe, right?


Wrong!


I have tried more than a few over the course of my mom cooking career. Always on the hunt the easiest {fastest to the table} best tasting one. Well I have found it! This can easily be made with more heather options as well.

White Chicken Enciladas with Green Chilie Sour Cream Sauce



2 cups grilled chopped seasoned chicken {when I am in a hurry I used the prepackaged stuff} cooked
8-10 small flour tortillas
1 small can chopped green chilies
2 cups chicken broth
3 tablespoons butter
3 tablespoons flour
1 cup sour cream
2 cups grated cheese {more or less}
Fresh cut cilantro





Preheat oven to 425* . Dice and cook chicken until done. Mix cooked chicken with 1 cup cheese. Heat tortillas in microwave for about 40sec. just to soften them up. Fill each tortilla with chicken/cheese mixture roll and place in a slightly greased 9 x 13 baking pan.


In the same skillet I browned the chicken in place 3 tablespoons butter and add the heaping tablespoons of flour. Mix well and slowly add the chicken stock. Cook over med heat, stirring constantly, until sauce thickens. Remove from heat and your green chilies and sour cream. Pour sauce over tortilla’s and top with remaining grated cheese. Cook for about 20-25 minutes. Allow to cool top with fresh cilantro and enjoy! Recipe originally from Let’s Dish!

Teacher Subway Art Gift

It’s the end of the year “what the heck to get the teacher” panic mode!


Over the year we do our best to shower the kiddos teachers with notes of appreciation, homemade sweets and flowers.


So, as yet another school year comes to and end, I try to have a cute little token to thank them for guiding our child throughout the year.


This year I stumbled across this FREE printable over at eighteen25.


Bingo! I am so in love with all things that resemble subway art I thought this was too cute.


So a frame shopping we went. I wanted a nice heavy frame that had an easel back. As not all teachers have the capability to hang pictures in their classrooms.


I was all smiles when I found these at my local Uptown thrift store.



Still wrapped in plastic, heavy, velvet easel back...$3.03 each…perfect!


I bought four, took them home, gave them a fresh coat of paint and popped my subway art in.


We wrapped them up really cute and attached a Sonic gift card for them to enjoy over the summer.


Sometimes the best ideas come to those who procrastinate!

Here chick...chick...chick!

We visited my sister last weekend and her new “family members”.





Just a few weeks after they had to put their dog down {remember THIS}. They were on the hunt for something to take their kiddos mind off having lost their dog.


That’s when they lost their minds and became the owners of a dozen or so little chicks and a chicken coop!


Hannah and Gabe have been anxiously waiting to meet their new little cousins!


And boy did they get a kick out of them!


Spud showed us his special chicken training talents.



Hannah caught on quickly.



And the chicks learned to fear for their lives!


They had high hopes of gathering lots of eggs. But as the chicks have gotten older they realize they are all rosters, except for one!


We gotta get them plumped up.It won’t be long till we have us a nice little chicken fry!
