Gee, I Think I Overbooked my Weekend!

This weekend I had just about every waking daylight moment booked.

Starting with an all day Mini Valentine Session on Saturday, followed by a University banquet that night I was due to shoot.

Then, on Sunday I had a family session of four and then another families newborn shoot. For someone that also has a full time job and kiddos this was pushing the limits.

I have started the editing process and thought I'd share a few of the Valentine's Day sessions with you! If you don't see your child here please don't worry. I have not got to everyone just yet.

We have been having such great weather for the past few weeks.

And luckily I have been able to shoot a few out door shots.

This was a couple trying to catch a few pictures with their grandkids.

Such a great idea.

Time goes by so very fast.

Chicken Wild Rice Soup

Ok, so this is not a "Fat Free" soup. Nor, is it ready in 20 minutes. But the time you put it's totally worth the effort.

Ingredients you will need:

1/2 Cup butter
1 finely chopped onion
1/2 Cup chopped celery
1/2 sliced carrots
1/2 pound fresh sliced mushrooms
3/4 Cup all-purpose flour
6 Cups chicken broth
2 Cups cooked wild rice
1 pound boneless skinless chicken breasts, cooked and cubed
1/2 teaspoon salt
1/2 teaspoon curry powder
1/2 teaspoon mustard powder
1/2 teaspoon dried parsley
1/2 teaspoon ground black pepper
1 Cup slivered almonds
3 Tablespoons dry sherry (optional)
2 Cups half-and-half

Directions:

Melt butter in a large saucepan over medium heat.

Stir in the onion, celery and carrots and saute 5 minutes.

Add mushrooms and saute for 2 more minutes.

Then add flour and stir well.

Gradually pour in the chicken broth, stirring constantly, until all has been added. Bring just to a boil, reduce heat to low and simmer.

Next, add rice.

Chicken.

Salt, curry powder, mustard powder, parsley, ground pepper and salt.

Add almonds.

Allow to heat through, then pour in the half-and-half. Let simmer for 1-2 hours. {note: do not boil or your roux will break.}

Christmas Recap, somewhat!

Not sure if posting about Christmas is "acceptable" at such a late date. But, hey lately late has been my middle name... So fitting as it happens to rhyme with Kate!

We had a very blessed Christmas with family and friends. So thankful that yet another year has passed and we have all been healthy and well enough to get together.

However, we did have our share of some exciting times. Ryan, threw out his back and spent much of Christmas drugged beyond coherencies. It provided some comical moments at his expense. Thankfully by New Year’s he was feeling worlds better.

Ryan found this grungy, fabulous, to die for chair that we hauled to my wonder working upholstery diva. I decided to take one of the wingbacks from my pair to have a leg repaired. Only to watch it fly out of Ryan's truck on the HWY half way there. Thankfully no one was injured, except my chair. It celebrated New Years in the dumpster. Sniff, sniff. But this one lived and I can't wait to get her back!

We rang in New Year’s Eve grilling out steaks, enjoying the unusually fabulous weather. Friends were over and I stepped away for a few minutes only to hear Ryan say "I think I see flames out the window"! Our gas grill was a blaze. I quickly turned off the gas removed the steaks. Ya, don't mess around with meat at our house. And still the fire grew. Running back in to grab the fire extinguisher, a gift from my neighbor after I caught the brisket in our oven on fire when we first moved in 7 years ago. I slid and bone bruised my tail bone. Ten days later and I still squint and set very slowly. Needless to say the fire extinguisher did the job. And left quite a mess for me to clean up. Lesson learned, it's best to clean out your grease tray located just under your grill.

Lastly, scenes of Caddy Shack have been taking place in our yard. Moles, golfers, R-O-D-E-N-T-S whatever you want to call them have claimed our yard as there new turff to conquer. A visit to my local Co-op has had the neighborhood kiddos all over to watch. As I drop lighted bombs and arsenic pellets into well over 20 mounds! They set with loaded BB Guns in anticipation of "shooting" one that might pop its little head out. We are still at war but I can see that they are preparing to raise their white flag any day now.

Awe, who new home ownership could be sooo exciting! It's going to be a great year!

This past October we took our family vacation to a great little spot.

Known as Oahu, Hawaii.

We drank fresh coconut milk with fried apple bananas.

We enjoyed SOOOOO much while there.

We visited Pearl Harbor

Hung with The Duke at Waikiki Beach

This picture was taken by a local resident with our boat guide on Waikiki. I love the the fact that we are so out of focus... We look like we are on a green screen!

Climbed Diamond Head in under 20 minutes

Snorkeled in Hanauma Bay

Drove the coast line

Watched the surfers on the North Shore

Visited the original Dole Plant, and lugged 6 pineapples back to the main land.

I am a HUGE, HUGE lover of all things fish. The kiddos not so much.

In Hawaii they LOVE their shaved ice. The kicker is they put fresh vanilla ice cream in the bottom. I am one that does not like to mix her foods . But this was out-of -this world delish!

Now that it's the dead of winter I long to be on the sunny beaches of the Island.

We had a fabulous trip! And look forward to maybe one day returning to visit a few more Islands.

It has been a very busy season for us this year. Working my full time day job. And every minute I had off working HannahKate Photography.Wah, wah, right?

So this year we skipped the traditional baking and went all natural!

I wrapped my last gift this past week.

Now they wait patiently under the tree ,only to be ripped to shreds in mere minutes.

Each year I theme wrap them all. Almost always in bright vivid colors. But this year I wanted to be "trendy" and go all gray on gray.

Now that I step back and take a look I see more silver and thoughts if wedding bells ring in my ears!

Oh well, they are wrapped an all ready to go!

My Crash Test Dummies!

My kiddos are great!

And have this "picture “taking thing down to a "T".

They know if they can give me 20 minutes we will be outta there.

But, if they decided not to corporate.

It can take forever!

They are my "test dummies" for any new location I want to try out.

This day it just so happened to be a dentist office. That just so happened to set on a very busy street.

Nothing a "tween" likes to do more than have her good ole mom make her drag a couch out onto a dentist office lawn and make her pose on it!

Social butterfly has a never ending list of friends that she "has" to gift each year. And each year I always try and think of something they would use and s super cute to boot.

This year we did purple glitter nail polish { just also happens to be the school school}.

I was able to make 16 {wrapped} gifts for $33.83.

This summer I picked up a bottle of nail polish for Hannah at Target. Not wanting to spend $8 bucks a bottle I got her a brand they carry called Sinful. This stuff stayed on all digits FOREVER and is $1.99.

So 16 jars of $1.99 nail polish and $1.99 for nut cups and we were ready to wrap.

I buy crinkle wrap in bulk for HannahKate Photography so I had plenty to spare. The clear bags I keep on hand at all times. And we pulled ribbon from my huge stash. I truly feel that gift presentation is part of the gift!

Added a cute gift tag and, whola! Perfect tween gift to share.

Cranberry Walnut Slaw

This is a slaw a co-worker of mine shared with me just before Thanksgiving.

It's delicious, colorful easy and perfect for the Holidays.

Ingredients:

1 16 oz. package shredded coleslaw mix
6 small chopped green onions
1 stalk celery, chopped
1/2 cup dried cranberries
1/4 cup chopped walnuts
1/4 cup balsamic vinegar
1/4 cup rice wine vinegar
1/2 cup vegetable oil
1/2 teaspoon salt
1 1/2 teaspoons dry mustard
ground black pepper to taste

In a large bowl, toss together the coleslaw mix, onion, celery cranberries and walnuts. Mix vinegar, sugar, oil salt, mustard and pepper in a mason jar. Pour over slaw mixture and toss to coat. I mixed the first 3 ingredients together and mixed the dressing up the night before. Right before dinner I added the cranberries and walnuts then the dressing.

It's almost over!

The pre-season photo session marathon! I haven't even had time to post about all the fabulous people I have meet during my sessions.

Slow Cooker Cheesy Potato Soup

Finally, FINALLY, the Canada jet stream has dropped down to greet us!

I L-O-V-E crisp fall days that you can feel when you breathe in deep.

It also means the return to soup lovin’ days! We had this over the weekend and it’s not a bad crock pot potato soup. The kiddos had three bowls each!

Slow Cooker Cheesy Potato Soup

What you need:

1 Bag 32oz frozen southern-style diced hash brown potatoes, thawed {mine were still frozen}

½ Cup frozen chopped onion {I chopped them up and toss in the freezer what I don’t use}
1 medium stalk celery, diced {1/2 cup}
1 carton 32oz chicken broth
1 Cup water
3 Tablespoons Gold Medal all- purpose flour
1 Cup milk
1 bag {8oz} shredded American-cheddar cheese blend {2 Cups}
¼ bacon browned and crumbled
4 medium green onions

What to do:

In a 3-4 quart slow cooker, mix potatoes, onion, celery, broth and water. Cover, and cook on LOW for 6-8 hours.

In a small bowl, mix flour into milk; stir into potato mixture. Increase setting to HIGH. Cover, cook 20-30 minutes or until mixture thickens. Stir in cheese until melted. Garnish individual servings with bacon and green onions.

· I changed it up a bit and added salt, pepper and a tad bit of garlic salt to start.

This was an estate sale that we hit about two weeks ago.

One of those drive forever.... then drive forever down a gravel road.... then drive forever down a dirt road. Wondering if you are alone! Then JACKPOT...you see BARN'S full!

Great shelf for little man’s room. He has more “collections” than space. And if you squint you can see the postal numbers in the back of each box.

This STOP sign he wanted on our last outing, it was $65.00, this one just $5 bucks.

I love it when I hit a great sale.

What I Want for My Kiddos!

I have been on the hunt for MONTHS looking for an old couch to toss out in a filed for pics. And though I have yet to find one I have come across LOTS of other little things along the way.

Eyes WIDE Open!

The aroma of coffee makes me perk up every time I breathe it in. Even though I am not a hot coffee drinker. Oh, I’ve tried…different flavors with creamers and even REAL cream. Just can’t get used to it.

However, a Vanilla Mocha Frappuccino from Starbucks has me at hello. So when I came across this little concoction on Pinterest I could not wait to give it a try.

2 Tablespoons instant coffee granules

2 Tablespoons fat free vanilla flavored coffee creamer, powdered
½ cup fat free milk
8-12 ice cubes

Blend all ingredients together in a blender and process until smooth. If desired, sweeten with Splenda.

Entire recipe makes 1 cappuccino smoothie. Yields 95 calories, 0g fat, 17g carbohydrates, 4g protein

My only mistake was making this at 5pm Saturday evening. For someone that’s not a coffee drinker it 's equal to about 4 cups of coffee. I didn’t crash until the next morning while sitting in service.

Christmas 2011

Its official Hannah Kate Photography is now Hannah Kate Photography L.L.C.! Learning more and more with each passing day the wonderful laws and guidelines the state requires me to take. All in all it’s not been that bad.

Frozen Lemonade Pie

Southern cooks sure know what they’re doing! Granted it might not be the healthiest option, but in moderation can be devoured!

I came across the recipe from the FoonNetwork channel via The Neely’s. It was an instant hit out our house had has made it to the “repeat” section of my cookbook binder. Perfect for any summer get together, so “pin it” for next year.

Frozen Lemonade Pie

1 large-size store bought graham cracker pie crust

1 {14 oz.} can sweetened condensed milk, chilled {I used the low-fat one}
1 {12 oz.} container Cool Whip, thawed
1 {6 oz.} can frozen lemonade concentrate, KEEP frozen
1 teaspoon candied lemon peel for garnish {optional}

In medium bowl, add chilled sweetened condensed milk and Cool Whip, fold gently together. Add frozen lemonade to bowl and gently fold in. Do not let mixture become soupy. Pour mixture onto pie crust and freeze overnight. Garnish with candied lemon peel, if desired.

Serves 8

10 Years ago Today

Ten years ago today Hannah was setting in her highchair eating pancakes and looking forward to her very first day at Mothers Day Out.

As I was running around the kitchen ,talking to her as she ate, The Today Show was on in the background. I can close my eyes and replay that day over and over in my head. And how for days after that the sky was early so quiet.

I've been to that fence in N.Y.C. where all those tiles hang today. It's moving to see just how vast the lives touched but such a horrific day.

One day I know that His plan will be made clear to us all.

A Box of Baking Soda

If I really had lots of spare time this is something I would do more than just twice a year. Say every three months or so. Don’t miss understand me our sheets and bedding are washed weekly. But the DEEP cleaning not so much.

Each spring and fall I deep clean all our mattresses using this little combo of baking powder and lavender. Ideally scented oil would work best but I don’t like the smell to linger too much.

While what seems to be loads and loads of sheets, blankets and mattress pads get washed I sprinkle this all over the mattresses and allow it to set for at least a few hours.

The baking soda helps draw out moisture and freshen the mattress up. I simply plop my vacuum on top of the mattress and vacuum up the powder and heaven knows what else.

It’s truly amazing at all the uses a $.50 box of soda can do for you.

Product LOVE and a Bean Pot!

I’m not sure where I originally bought this little jar of mine. Bets are it was Target.

During July it held cute little Fourth of July flags for me. And ever since it’s just been “hangn’ out” until that a light bulb moment occurred.

All around this fabulous new little product love of mine.

Olay makes this little eye brightener that I gifted myself on my last birthday. Seems with each passing year more little gizmos like this show up, ha! It really has done wonders and makes me feel so much better. Sad thing is it works best when it can stand up like this.

So insert cute little bean filled jar…

And tada...The best brush/goods holder a girl could want.

It was like Christmas morning, but better!

Yep, I believe I have forever confirmed my name to the William Sonoma mailing list after my most current purchase.

This beauty arrived earlier this week. And yes it is an OUTRASGOUSLY priced piece of equipment. But let me take a moment to try and justify it.

First, I am a working mom who hates {HATE’S} to waste my time ironing, nor do I want to pay someone else to do it for me. And my current iron was not getting the job done. So, a googling I went to track down the best iron I could.

There is much discussion about the high level of generator irons available overseas. And after lots of a research I knew that was my answer. I spent a few weeks researching and reviewing a number of irons. And this one seemed to fit the bill best.

It heats up in a mere 3 minutes and honestly cuts the time in HALF to iron anything. It even has a heavy duty fabric wrapped double cord just like grandmas!!! The water is stored in a large generator and pumped to the iron. Making the iron as light as a feather with full steam ALL THE TIEM {smile}! Check out the 400 steam holes...

We all stood around watching the miracle before our eyes. It’s truly amazing…you can check out the online video here.

I was somewhat reluctant to purchase another Rowenta. The few I had paid a $100 for never seemed to last me longer than a few years. But I have faith that this one will last me for years to come.

Now, I just have to convince my hubby to make our next household appliance investment a Vitamixer!

Oh Happy Day!

Little man was fired up for his first day back.

He even packed his own lunch the night before, sniff, sniff.

Tossed on his new messenger bag {wanted to be just like big sister this year} and was grinning ear to ear.

Social butterfly was less enthusiastic about holding the cute sign I printed for her.

But no one was out in their yard and she encouraged me to shoot fast!

For her this year it’s all about denim shorts {rolled up}, graphic Junk Food T’s and TOMS. And no more monogramed names on her goods.

It was her first day at middle school. Its official as I type and glance down at my ever ageing hands, I’m getting older with every second!

Maybe they have been sitting on those shelves for years, but there new to me.

Perfect for lunch treats and packing dipping sauces.

Hearty Stir Fry

Here is a fast, tasty and hearty stir-fry sure to please everyone in the family!

2 lbs. Sirloin steak, cut into strips

1-2 Green Bell Pepper {cubed or sliced}

1 Yellow onion, sliced
1 Cup cooked rice
2 tablespoons cooking oil
1-2 tablespoons La Choy sauce.
1 Cup Beef Broth
Salt and pepper {to taste}

What real life looks like, I know we all like seeing that other people are just as “normal” as we are!

On with the cooking, Drizzle oil into large fry pan and heat on med-hi. Meanwhile slice sirloin into strips. Cook in hot oil until no longer pink.

Toss in green pepper, onion, La Choy sauce, beef both, salt and pepper. Cover and allow to cook for about 20 minutes, until most of the broth is cooked down. At the same time prepare your rice according to the box. When rice is done stir into beef mixture and serve.

I serve these after dinner; my kids get a hoot out of hearing mommy and daddy’s fortune!

Fresca Biscuits

This weekend I tried a new recipe for Sunday morning breakfast! It’s been book marked on my Pinterst obsession board for a few weeks.

After I measured out my Bisquick and forked in my sour cream it dawned on me I didn’t have any 7-Up! So I used what I had, Fresca, and mixed away.

Now, this is a VERY soft and sticky dough. You can try and pat it out and use a biscuit cutter. Or just go old fashion and do drop biscuits like I did.

melted the ¼ cup butter in my 9X13 pan and dropped my dough in. Baked in a 450* oven for about 10 minutes or so. Simple and fast for early Sunday mornings before church.

Fresca Bisquick Biscuits

2 Cups Bisquick

1 Cup Fresca

¼ Melted butter

Say What?

Raising kids can be hard work, to say the least. And my little man is always pushing the envelope on making mommy jump off the edge!

We just returned from a mini trip to the “happiest place on earth” and I am now really ready for a vacation. {Pictures are via iphone because I can't find my camera cord right now!}

Here, in no particular order, are some of the random thoughts that came out of the mouths of my off spring. Most of which happened while driving in the car. So glad to be reassured there is no lack in their imagination.

While driving Hannah looks out the window and asks… “Mom, Is the man who invented bubble wrap still alive?”

“Hey mom, can I yo-yo out the window?

“We can’t take our itouch to school, just those really old CD players.”

“How did they make the tornado in the Wizard of Oz?”

“What’s your favorite flavor of ice?”

“MOM, what’s a VCR?”

Hopefully this weekend I will have some time to work on creating and sharing some posts with you next week. Things on this blog have really slowed down. Now that I have taken on yet another job as my kiddos continue grow up at lightning speed, that of a taxi driver.

Yes, I have now official entered the taxi driving years!

*UPDATE* This was how little man rode ALL the rides...Space Mountian, Rock-n-Roll Roller Coster, Tower of Terror, Splash Mountian... you name it he wanted to be in the front seat with his hands up on every ride!

At the age of 6 he had NO interest in meeting any characters. Just wanted to ride the rides. I was one sad momma! How will I ever oget over his HUGE lack of fear?

Frozen Dessert a.k.a The Bomb!

I live in a great state! However, the temperature here this summer has been insane. Today we official broke any record that has ever been recorded sense they have been keeping records. That includes the Dust Bowl!

So, I dug into my recipes files for a beloved “dessert” that I have now been letting the kiddos eat for breakfast, they think I rock right now {smile}!

We simply have always called it Frozen Dessert!

Combine:

¾ cup sugar

8oz. package cream cheese {softened}

Beat until well blended and add the below.

Combine:

1 large can pineapple tidbits {drained}

               1 10-16 oz. package frozen strawberries {thawedwith  juice}
                 ½ chopped pecans
                 2-3 bananas, sliced

Mix everything together and pour in a cake pan {9x13}. Freeze overnight. Take from freezer 15 minutes before serving. I do substitute reduced and fat free products where I can

I have Mastered Photoshop

I just had to share this…

For the past few weeks I have been staying up into the WEE hours of the morning trying to teach myself how to use my new Photoshop software.

I can’t tell you how many times I wanted to launch my laptop across the room. But this week it finally started to all “click”! I have concurred layering masks! The above image was SOOC {straight out of the camera}.

Now take a look after I ran it through Photoshop!

So excited to now be able to offer even better images to my clients.

Yes, yes I am patting myself on the back for this one. If you have ever attempted to learn new software, ALONE, you know how rewarding this is.

Can’t wait to start designing all those Christmas Cards this year!

Nothing like trying to wish yourself into a cooler place and time!

Honest to Betsy I’m not sure how we ever survived this heat before AC.

Anyway, am addicted to Sarabeth’s Strawberry- Peach jam. It makes the best toasted chunky peanut butter and jelly sandwich around.

So when I had a few pounds of this

I decided to make freezer jam, following these steps.

Super easy and come December when its 10 degrees out I’ll close my eyes and think back to that 109…

I made a double batch to pass out to teachers and friends, along with some scones mixes, for Christmas this year.

I filled 18 cute little jars like this and dropped them in my deep freeze. So happy to already have something to mark off my list!

The kiddos and I have been rockin out to him in the car all this week!

Here’s a few amazing things about Robert…He just graduated from HIGH SCHOOL in Orlando, Florida. Here he regularly leads Sunday morning worship at his 800+ member church. In addition to writing and recording I’m All In and playing on a summer tour. W-O-W!

“All of the songs have something to do with things I was going through my senior year,” Robert said of I’m All In. As he was preparing to say goodbye to friends and not really knowing what would come next he found comfort and peace in the Lord’s plan for his life.

I think we all need to “pinterest” this as a great gift for all the seniors in our life next year. And guess what?

End of the Season

Somehow, we as parents, allowed out 6 year old to join a competitive T-ball team this past season.

Hmmm…in retro spec it might not have been the best parental move we have made. But, as with everything, it was a HUGE learning experience.

He had a blast learning his position as a catcher… It was about the only position that helped him stay somewhat focused and in the game.

Hitting home runs {and learning NOT to drop his hands when swinging}

Or just making it to first and learning to LISTIN to when the coach says to run.

One thing he can do really well

Is slide.

And get Oklahoma dirt red dirty!

We he have fulfilled our obligation and made it through our first year of competitive t-ball. And my eyes {and ears} have a whole new prospective on competitive sports.

But this group of boys play’s with true heart and was lots of fun!

It's time to leave the nest...

I respect nature and wildlife, I really do.

And I understand that I can be fined up to $10,000.00 for trying to remove this lovely little nest of Mud Swallows from my front porch.

I have been one patient mama {not a strength of mine} waiting for these little ones to fly, fly FAR away.

So that I don’t have to scrap this off my front porch every morning.

This is their third year to stay with us, in the EXACT same spot. After they move out I am bleaching those rocks in hope to “relocate” them to a more coastal view!

My First Wedding

I shot my first wedding last month.

Not sure who had more butterflies in their stomach, me or the bride!

It helped she was so relaxed and wanted to capture her day with candid images, rather than posed.

The new camera a speed lite were put to the test.

I have so much more studying to do with regards to my aperture and ISO setting in low light! Natural light is a piece of cake; we can all shoot in that. But really learning how to read light in a room means you can take good pictures anytime anywhere. And I have yet to learn the Photoshop software that I got 3 months ago.

It means that not just every few pictures you take are good.

It’s means that every picture you take is a keeper.

This was the second marriage for both of them. The day was really relaxed and this time around they both knew what was important.

Never thought I would start shooting weddings…but I have already booked another one.
